How to bake trout steaks with vegetables in the oven? Prepare all the products according to the list. It is better to take trout steaks fresh, but fresh-frozen ones will do. Potatoes can be used both young and old harvest. Tomatoes should be dense and fleshy. Spices take at your discretion, I use only salt and pepper, so as not to interrupt the true flavor. Since the fish is baked much faster than the vegetables, the potatoes need to be boiled beforehand.
Wash the young potatoes thoroughly with cold water using a special brush. Cut the potato tubers into medium-sized slices. If the potatoes are young, there is no need to peel the tubers. If the potatoes are old, I recommend removing the skin. If desired, you can also leave it on, of course.
Place the potato slices in a saucepan. Fill with water so that it completely covers the vegetables. Salt and place on the stove until boiling. Skim off the foam, turn down the heat and simmer for 15-20 minutes until tender. Drain. Cooking time depends on the variety and size of the vegetable, as well as your stove.
Meanwhile, marinate the fish. Rinse the trout steaks quickly and pat dry with paper towels. Season with salt and pepper on both sides. Drizzle with freshly squeezed lemon juice and let marinate for 10-15 minutes. Turn the oven on to 200 degrees.
In the meantime, prepare the rest of the vegetables. Peel the onions, rinse and cut into thin semi-rings.
Wash the tomatoes, remove the stalks and cut into slices. Do not cut them coarsely, otherwise they will not have time to bake, do not cut them finely either - they may turn into mush.
Place the boiled young potato slices in a single row in the baking dish. Drizzle with refined vegetable oil, olive oil is fine.
Top the potatoes with the onion halves and add a couple more drops of oil.
Next, spread the tomato slices evenly over the potatoes. Salt and pepper the vegetables, keeping in mind that the potatoes are already salted.
Place the marinated trout steaks on top of the vegetables and pour the remaining marinade over the top.
